Brazilian Cashew Moqueca

A coastal Brazilian fish stew flavored with coconut milk, palm oil, and crushed cashews.

Ingredients

  • 400g white fish chunks
  • 1 onion, sliced
  • 1 tomato, chopped
  • 200ml coconut milk
  • 2 tbsp crushed cashews
  • 1 tbsp dendê oil or olive oil

Preparation

  1. Layer fish, onion, tomato in a pot.
  2. Pour coconut milk and oil over; simmer 15 min.
  3. Add cashews for texture before serving.
