Brazilian Cashew Moqueca

A coastal Brazilian fish stew flavored with coconut milk, palm oil, and crushed cashews.
Ingredients
- 400g white fish chunks
- 1 onion, sliced
- 1 tomato, chopped
- 200ml coconut milk
- 2 tbsp crushed cashews
- 1 tbsp dendê oil or olive oil
Preparation
- Layer fish, onion, tomato in a pot.
- Pour coconut milk and oil over; simmer 15 min.
- Add cashews for texture before serving.
