Crispy coconut shrimp coated in crushed macadamias and served with tropical mango salsa.
Ingredients
- 300g shrimp
- 1/4 cup shredded coconut
- 1/4 cup crushed macadamias
- 1 egg, beaten
- Salt and pepper
Serves 2–4 · adjust quantities to taste
Preparation
- 1Dip shrimp in egg, then in coconut and macadamia mix.
- 2Fry until golden; serve with mango salsa.
