Crispy coconut shrimp coated in crushed macadamias and served with tropical mango salsa.

Ingredients

  • 300g shrimp
  • 1/4 cup shredded coconut
  • 1/4 cup crushed macadamias
  • 1 egg, beaten
  • Salt and pepper

Serves 2–4 · adjust quantities to taste

Preparation

  1. 1Dip shrimp in egg, then in coconut and macadamia mix.
  2. 2Fry until golden; serve with mango salsa.
