Caribbean Macadamia Coconut Shrimp

Crispy coconut shrimp coated in crushed macadamias and served with tropical mango salsa.

Ingredients

  • 300g shrimp
  • 1/4 cup shredded coconut
  • 1/4 cup crushed macadamias
  • 1 egg, beaten
  • Salt and pepper

Preparation

  1. Dip shrimp in egg, then in coconut and macadamia mix.
  2. Fry until golden; serve with mango salsa.
