French Cashew Ratatouille

Provencal vegetables finished with a sprinkle of crushed roasted cashews for texture and depth.

Ingredients

  • 1 eggplant
  • 1 zucchini
  • 1 red pepper
  • 2 tomatoes
  • 1/4 cup roasted cashews
  • 2 tbsp olive oil
  • Herbes de Provence

Preparation

  1. Dice and sauté vegetables with herbs.
