Indian Cashew Curry (Kaju Masala)

A rich North Indian curry featuring buttery cashews simmered in a tomato-cream gravy.
Ingredients
- 1 cup VietnamPrime cashews
- 2 tomatoes, pureed
- 1 onion, finely chopped
- 1 tbsp ginger-garlic paste
- 1/2 cup cream
- 1 tsp garam masala
- 1 tsp cumin
- Salt and chili powder to taste
Preparation
- Toast cashews until golden; set aside.
- In the same pan, cook onion and ginger-garlic paste.
- Add tomato puree and spices; simmer 5 min.
- Blend some cashews with cream; add to pan.
- Simmer until creamy and serve with naan.
