Indian Cashew Curry (Kaju Masala)

A rich North Indian curry featuring buttery cashews simmered in a tomato-cream gravy.

Ingredients

  • 1 cup VietnamPrime cashews
  • 2 tomatoes, pureed
  • 1 onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 1/2 cup cream
  • 1 tsp garam masala
  • 1 tsp cumin
  • Salt and chili powder to taste

Serves 2–4 · adjust quantities to taste

Preparation

  1. 1Toast cashews until golden; set aside.
  2. 2In the same pan, cook onion and ginger-garlic paste.
  3. 3Add tomato puree and spices; simmer 5 min.
  4. 4Blend some cashews with cream; add to pan.
  5. 5Simmer until creamy and serve with naan.
