Indonesian Cashew Fried Rice

A nutty twist on Nasi Goreng featuring crunchy roasted cashews.

Ingredients

  • 3 cups cooked rice
  • 2 eggs, beaten
  • 1 cup vegetables (carrot, peas)
  • 1/2 cup roasted cashews
  • 2 tbsp soy sauce
  • 1 tbsp kecap manis (sweet soy sauce)

Serves 2–4 · adjust quantities to taste

Preparation

  1. 1Scramble eggs in a wok; set aside.
  2. 2Stir-fry vegetables, then add rice and sauces.
