Indonesian Cashew Fried Rice

A nutty twist on Nasi Goreng featuring crunchy roasted cashews.
Ingredients
- 3 cups cooked rice
- 2 eggs, beaten
- 1 cup vegetables (carrot, peas)
- 1/2 cup roasted cashews
- 2 tbsp soy sauce
- 1 tbsp kecap manis (sweet soy sauce)
Serves 2–4 · adjust quantities to taste
Preparation
- 1Scramble eggs in a wok; set aside.
- 2Stir-fry vegetables, then add rice and sauces.
- 3Toss in eggs and cashews; mix well.
