Italian Cashew Pesto Pasta

A silky take on Genovese pesto where buttery cashews replace pine nuts for a creamier finish.

Ingredients

  • 300g spaghetti
  • 1 cup fresh basil leaves
  • 1/2 cup roasted cashews
  • 1/2 cup olive oil
  • 1 garlic clove
  • 40g grated Parmesan
  • Salt and pepper

Preparation

  1. Blend basil, cashews, garlic, and olive oil until smooth.
  2. Stir in Parmesan and season.
  3. Toss with hot pasta and serve immediately.
