Crisp twice-baked cookies with macadamias and a hint of vanilla — perfect with espresso.

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup macadamias

Serves 2–4 · adjust quantities to taste

Preparation

  1. 1Mix dough, fold in macadamias.
  2. 2Form logs and bake 25 min; cool, slice.
  3. 3Bake again 10 min until golden.
