Senegalese Cashew Yassa

Tangy onion-chicken stew finished with roasted cashews for a rich texture.

Ingredients

  • 400g chicken
  • 2 onions, sliced
  • 1 lemon, juiced
  • 1/4 cup roasted cashews
  • 1 tbsp mustard

Preparation

  1. Marinate chicken in lemon and mustard 30 min.
  2. Cook onions and chicken together until tender.
  3. Add cashews at the end for crunch.
