Ingredients

  • 4 ripe tomatoes
  • 1 cucumber
  • 1/2 red pepper
  • 1/3 cup soaked cashews
  • 2 tbsp olive oil
  • 1 tbsp sherry vinegar
  • Salt to taste

Serves 2–4 · adjust quantities to taste

Preparation
