Ingredients
- 4 ripe tomatoes
- 1 cucumber
- 1/2 red pepper
- 1/3 cup soaked cashews
- 2 tbsp olive oil
- 1 tbsp sherry vinegar
- Salt to taste
Preparation
- Blend all ingredients until creamy.
- Chill 1 hour before serving.
- Garnish with diced vegetables and olive oil.
