Spanish Cashew Gazpacho

A chilled Andalusian soup enriched with blended cashews for a smooth, nutty texture.

Ingredients

  • 4 ripe tomatoes
  • 1 cucumber
  • 1/2 red pepper
  • 1/3 cup soaked cashews
  • 2 tbsp olive oil
  • 1 tbsp sherry vinegar
  • Salt to taste

Preparation

  1. Blend all ingredients until creamy.
  2. Chill 1 hour before serving.
  3. Garnish with diced vegetables and olive oil.
