Thai Cashew Nut Shrimp

A Thai seafood classic combining crunchy cashews, chili, and plump shrimp in a sweet-spicy glaze.

Ingredients

  • 300g shrimp, cleaned
  • 3 tbsp sweet chili sauce
  • 1 tbsp soy sauce
  • 1/2 cup roasted cashews
  • 1 red chili, sliced
  • 1 onion, chopped
  • 1 tbsp oil

Serves 2–4 · adjust quantities to taste

Preparation

  1. 1Stir-fry onion and chili in oil for 1 minute.
  2. 2Add shrimp and cook until pink.
  3. 3Add sauces and stir well.
  4. 4Mix in cashews just before serving.
