Thai Cashew Nut Shrimp

A Thai seafood classic combining crunchy cashews, chili, and plump shrimp in a sweet-spicy glaze.
Ingredients
- 300g shrimp, cleaned
- 3 tbsp sweet chili sauce
- 1 tbsp soy sauce
- 1/2 cup roasted cashews
- 1 red chili, sliced
- 1 onion, chopped
- 1 tbsp oil
Preparation
- Stir-fry onion and chili in oil for 1 minute.
- Add shrimp and cook until pink.
- Add sauces and stir well.
- Mix in cashews just before serving.
