Thai Green Curry with Macadamia Cream

Ingredients

  • 400ml coconut milk
  • 2 tbsp green curry paste
  • 1/2 cup macadamias, blended into cream
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • Thai basil

Preparation

  1. Simmer curry paste with coconut milk.
  2. Add vegetables and cook until tender.
  3. Stir in macadamia cream for thickness.
  4. Top with basil leaves before serving.
