Tunisian Cashew Tagine

A fragrant North African casserole with eggs, herbs, and roasted cashews baked until golden.

Ingredients

  • 6 eggs
  • 1/2 cup chopped spinach
  • 1/4 cup roasted cashews
  • 1 tsp cumin
  • Salt and pepper

Preparation

  1. Whisk eggs with spinach, spices, and cashews.
  2. Pour into greased dish and bake at 180 °C for 25 minutes.
