Vietnamese Cashew Rice Paper Rolls

Fresh herbs, vegetables, and cashews wrapped in soft rice paper for a light, tropical bite.

Ingredients

  • 8 rice papers
  • 1 cup roasted cashews, chopped
  • 1 carrot, julienned
  • 1 cucumber, sliced thin
  • Fresh mint and cilantro
  • Dipping sauce: hoisin + chili + lime juice

Preparation

  1. Soak rice papers briefly in warm water.
  2. Lay out veggies and herbs, top with cashews.
  3. Roll tightly and serve with dipping sauce.
