Fresh herbs, vegetables, and cashews wrapped in soft rice paper for a light, tropical bite.
Ingredients
- 8 rice papers
- 1 cup roasted cashews, chopped
- 1 carrot, julienned
- 1 cucumber, sliced thin
- Fresh mint and cilantro
- Dipping sauce: hoisin + chili + lime juice
Preparation
- Soak rice papers briefly in warm water.
- Lay out veggies and herbs, top with cashews.
- Roll tightly and serve with dipping sauce.
