Fresh herbs, vegetables, and cashews wrapped in soft rice paper for a light, tropical bite.
Ingredients
- 8 rice papers
- 1 cup roasted cashews, chopped
- 1 carrot, julienned
- 1 cucumber, sliced thin
- Fresh mint and cilantro
- Dipping sauce: hoisin + chili + lime juice
Serves 2–4 · adjust quantities to taste
Preparation
- 1Soak rice papers briefly in warm water.
- 2Lay out veggies and herbs, top with cashews.
- 3Roll tightly and serve with dipping sauce.
